After trying a plant based “Meatball Sandwich” at the Woodstock Fruit Festival, Anji experiments in the HHV kitchen to create her own healthy high carb, low fat, no salt version of this traditionally unhealthy dish. This raw vegan zucchini boat recipe is fairly advanced and requires the use of a food processor, blender and dehydrator to prepare. Raw Vegan Zucchini Boat Ingredients:

Container fresh crimini mushrooms
3 carrots
2 sticks celery
1/2 cup raw walnuts
1/2 red pepper
Handful sun-dried or dehydrated tomatoes (preferably no oil or salt)
Spices (to taste): green onion, basil, parsley, marjoram, rosemary, thyme, black pepper, celery salt3 fresh tomatoes
