You asked for it, you got it! Anji returns to the HHV kitchen to share the quick ‘n’ easy Spanish Rice meal that she made for herself and Ryan at the 2013 Woodstock Fruit Festival. This simple recipe can be made directly in your rice cooker. In addition to the rice, Anji makes a basic guacamole/salsa condiment which is where the real magic happens. This healthy dish has no oil, no salt, no onions or garlic, but it does contain optional red pepper flakes. Of course, if you really love onions and/or garlic, you can add those into your toppings or directly into your rice cooker!

EASY SPANISH RICE

INGREDIENTS:

2 cups short grain brown rice
2 cups chopped fresh tomatoes (1 for rice, 1 for topping)
1 small sweet yellow or red pepper
1 ripe avocado, chopped
Handful fresh cilantro
1 lemon, juiced
Large handful of fresh spinach
Cumin powder
Red Pepper flakes (optional)
Lemon Pepper (optional)
