Plantains and Black Beans

INGREDIENTS:
3 fully ripe plantains
2 cups short grain brown rice (or rice of your choice)
1 cup soaked black beans (or can of cooked beans)
1 cup fresh tomatoes

SPICES:
Ground cumin
Dried red pepper flakes/Chili powder or Cayenne
Cinnamon
Optional fresh cilantro
