Anji’s back in the HHV kitchen for another healthy recipe demo! So vegan pizza won out for my last recipe demo, but some of you wanted to see me make my Minestrone Soup. You are in luck this week!

Minestrone is definitely our go-to cooked soup because its very versatile and pretty much impossible to screw up. Though certain veggies are traditional to the recipe, you can just use whatever you have on hand. Also, you have your choice of rice, grain, or noodles. And if you’re into beans, pretty much any type tastes good with this! I love Canelli beans, but Kidney beans are also a great classic choice, and even Garbonzo Beans work. You also have your choice of greens; I used Spinach, but you could do Cabbage, Swiss Chard, or even Kale.

I was able to find most of the needed herbs fresh at my farmers market, but as I mention in the video, you can skip all that and just use an Italian herb mix. If you can still add some fresh Basil however, because the aroma alone is worth the investment! I also made 2 cups of beans the old school way, but you’re more than welcome to use a can of beans. Same goes for the tomatoes.

Now, as for my omission of Garlic and Onions. We just did a video on why we don’t eat them, so check that out if you haven’t already (http://youtu.be/QcW1IIAa6F4).That said, feel free to add them in if you want. Chop one full yellow or white onion and however many cloves of garlic you prefer. But don’t come crying to me if you get bad breath, heartburn or acid reflux – LOL.

INGREDIENTS:

1 – 2 cups canelli beans (or kidney, garbonzo, etc.)
1 cup wild rice (or brown rice,vegan noodles etc)
3 cups chopped potatoes (I used red potatoes, but your pick)
3 cups chopped roma tomatoes (+1 cup canned tomatoes or tomato sauce)
2.5 cups chopped zucchini (or other summer squash)
2 cups brussel sprouts
1 cup chopped baby bella mushrooms (or portobello or white etc)
1 cup chopped carrots
2 ribs celery
1 red or yellow bell pepper
2 cups spinach
Black pepper (to taste)

HERBS:

Basil
Rosemary
Parsley
Savory
Chervil
Thyme
Marjoram
Sage
Bay Leaves
(OR use dry Italian Mix, if you prefer)
